Green Smoothie Bowl

Green Smoothie Bowl:

Cool off with this refreshing smoothie bowl! Kale adds the pretty green color and sneaks in some calcium and iron to start your day! This smoothie will keep you going for hours.

Ingredients:

  • 1 banana
  • Handful of fresh kale
  • ½ c frozen riced cauliflower
  • 2 scoops vanilla protein powder
  • 1 Tbsp almond butter
  • 1 Tbsp flaxseed
  • ½ cup coconut milk
  • Topped with granola + cacao nibs

Directions:

  1. Place all ingredients into a high-speed blender and blend until smooth.
  2. Top with your favorites such as granola and cacao nibs!

Almond Butter Granola

Almond Butter Granola:

  • 1/3 cup smooth almond butter
  • 1/3 cup honey
  • ¼ cup coconut oil
  • 3 cups old fashioned oats
  • 1 cup slivered almonds
  • ¾ cup walnuts
  • ½ cup pumpkin seeds
  • ½ cup unsweetened coconut flakes
  • 2 Tbsp chia seeds
  • 1 tsp vanilla
  • ¼ tsp salt
  • 1 tsp cinnamon

Directions:

  1. Preheat oven to 325 F and line a baking sheet with parchment paper.
  2. Mix all dry ingredients together in a large bowl.
  3. Melt the coconut oil and add to a smaller bowl with the almond butter, honey, and vanilla extract. Stir until combined.
  4. Add the wet ingredients to the dry and stir until the oats are coated.
  5. Pour on the lined baking sheet and spread evenly. Bake for 25 minutes.

Savory Egg Cookies

For those days when we hit the snooze button too many times, are running out the door to get to work–these savory cookies save the day. Not only is this recipe low in carbohydrates, but it’s a great way to meet your daily vegetable requirement. Plus, these cookies freeze great so they’re at the ready when you need a quick grab and go meal. Oh and did I mention cheese…yes that is the icing on the cookie.

Savory Egg Cookies:

Servings: Makes about 12-14 cookies (depending on the size)

Ingredients:

  • 4 oz vegetarian sausage crumbles
  • 1/2 of a sweet onion, chopped
  • 1/2 of a green pepper, chopped
  • 3/4 cup almond flour
  • 3 eggs, scrambled
  • 1 cup shredded cheese
  • 1 tsp baking powder
  • salt and pepper to taste

Directions:

  1. Preheat oven to 375 degrees.
  2. Saute the sausage, onion, and pepper until the veggies have softened.
  3. Scramble the eggs and then add the cheese.
  4. Add the cheese and eggs to the vegetable and sausage mixture that has cooled
  5. Add baking powder and mix all ingredients until combined
  6. Spoon mixture on baking sheet with parchment paper and form a cookie shape
  7. Sprinkle each cookie with more cheese
  8. Bake for 8-10 minutes

Golden Tropical Smoothie

When you’re craving the beach, but can’t get there fast enough make this smoothie! I used mango, pineapple, and banana to make this smoothie extra sweet and colorful! Plus, you get a healthy dose of turmeric, which has tons of anti-inflammatory properties. Hello warmth and sunshine.

Golden Tropical Smoothie

Serves: 1 Smoothie

Ingredients:

  • 1 tsp golden milk powder
  • 1 banana
  • 1/4 cup pineapple
  • 1/4 cup mango
  • 2 scoops vanilla protein powder
  • 2 Tbsp cashew butter
  • 1/2 cup almond milk

Toppings: Homemade citrus granola (or your favorite kind), shredded coconut, cacao nibs, etc.


Green Smoothie On The Go

When I’m running out the door, this is my smoothie mixture of choice. I like how creamy this smoothie turns out– thanks to the avocado and gives me a little extra iron (thanks to the kale and spirulina powder). It’s sweet, but not too sweet and will keep you full for hours! The smoothie will for sure brighten your day.

  • 2 dates
  • handful of fresh kale
  • 3 Tbsp frozen riced cauliflower

  • ~1/2 cup almond milk
  • Optional: Flaxseed or chia seeds

Directions:

  1. Blend all ingredients in a blender until smooth.
  2. Top with your favorite toppings such as granola, shredded coconut, cashews, almond butter etc.

Everything But The Kitchen Sink Smoothie

Smoothies are one of my favorite breakfast options because you can add just about anything to it! Plus, its a great way to start your day with a serving of fruit AND vegetables. This recipe is more of an outline, but it turned out pretty darn good!

Everything But the Kitchen Sink Smoothie

Serves: 1 Smoothie Bowl 

Ingredients:

  • Handful of fresh spinach
  • 2 scoops of vanilla protein powder (I use Aria brand)
  • ½ small avocado
  • 1 banana
  • ¼ cup frozen cherries
  • 1 tsp maca powder
  • ¼ cup frozen zucchini
  • ½ Tbsp flaxseed + chia seeds
  • Dash of cinnamon + turmeric
  • ½ cup of almond milk
  • 2-3 ice cubs

Directions:

  1. Add all ingredients in a blender and blend until smooth and creamy!
  2. Top with granola, coconut flakes, nuts, dried fruit, and a nice drizzle of almond butter.

Chia Pudding Parfait

Sick of your regular yogurt and berry breakfast? Well give this Chia pudding recipe a try! This recipe is great for when you want to already have something ready to go in the morning. Chia seeds are a great source of omega-3 fatty acids (healthy fats), packs some protein and fiber, too! Though this make look soupy when you go to bed, trust me the chia seeds will thicken this mixture up in no time!

Chia Pudding Parfait

Serves: 1 Parfait

Ingredients: 

  • 2 Tbsp chia seeds
  • 1 Tbsp hemp seeds
  • 1/2-1 scoop of your favorite protein powder
  • 1/2 cup almond butter
  • 1 Tbsp nut butter

Directions:

  1. Mix all ingredients together in a jar or bowl and cover overnight.
  2. Layer first with chia pudding, then fruit etc.
  3. Top with coconut flakes, cacao nibs, nuts, nut butter etc.
